Say hello to our Vegan and Gluten-Free Banana Loaf – a lovingly concoction designed to honor your wellbeing and ignite a spark of culinary creativity within you.


Ingredients from Nature:

- 6 mini bananas or 3 large black bananas

- 25ml vegetable oil

- 50g brown sugar

- 50g Agave Syrup

- 225g plain gluten-free flour

- 3 tsp baking powder

- 3 tsp cinnamon

- 1 tsp nutmeg

- 1 tsp ginger

- 2 tsp vanilla extract

- 20g raisins or nuts (optional)


For the coconut icing:

- 60g icing sugar

- 3 tablespoons coconut milk

- 1/2 teaspoon pure vanilla extract

4. Embrace Versatility: Decide whether to bake one grand loaf or opt for smaller, individualised creations. The choice is yours, tailor this recipe to your heart's desire.

Keep an eye on its progress check after 20 mins with a skewer, then bake for a further 20 minutes ensuring a golden brown colour - but this depends on the type or sugar used, we used dark hence the beautiful colour


6. Crafting Elegance: As your loaf(s) cool, take a moment to prepare the coconut icing – a delicate touch to elevate your creation to new heights of indulgence. Sieve the icing sugar into a bowl. Add the coconut milk and vanilla extract, and mix until smooth.


7. A Finishing Flourish: With grace and precision, drizzle the coconut icing over your masterpiece, transforming it into a work of art with a few sprinkles or rose petals and blue lotus for decor!


8. Savor the Moment: With knife in hand, slice into your Vegan and Gluten-Free Banana Loaf(s), savoring each moment as you indulge in the fruits of y(our) labor haha
